Born in 1976, Chef Yusuke Matsutake is the owner and head chef of “Atelier de Champi”, situated in the historic castle town of Takeda. A graduate of Tsuji Gakuen Cooking & Confectionery College
, he honed his skills in France before taking on the role of head chef at Auberge Kinoko II in Japan. In 2013, he founded Bistro Champi, which was rebranded as Atelier de Champi in 2023.
